Let’s talk blueberries.

I need to talk blueberries, and I WANT to talk blueberries. Specifically, I want to talk about THESE:

Blueberry muffins...

When I made these little minxes yesterday, I had no idea that they would spend the next 24 hours tempting me into the kitchen, but tempt they did. I managed to hold out and actually SAVE some for my roommate, but by last night, I was cutting off “just tiny piece” of the runt of the batch, “just to taste” before bed.

Thank God they’re diet-friendly — my desktop Weight Watchers calculator has them at 5.6 points each, though it uses the fiber cap (which stops at 4 grams; each of these muffins has 8 grams), where I never do.*

So, the recipe? Simple: Wake up late, decide you want homemade muffins but lack the motivation to mix too much, pull out a box of Hodgson Mill’s Whole Wheat Muffin mix and follow the instructions on the box. Add some fresh blueberries, pour into a giant muffin tin and top with some sliced almonds. Bake. Eat.

Most importantly? Give them away quickly, or be prepared to scarf.
